Elaboration:
Distillation in stills at 65º to obtain excellent holandas. This brandy’s extraordinary characteristics are the result of the meticulous selection of the ingredient with which it is made.
It all starts with selection of excellent Palomino and Airen grape white wines, with early distillation and the method being key to the final quality of the distillates, which are aged in American oak barrels that have previously been primed with oloroso wine. Following the traditional soleras & criaderas system, it cycles through the different tiers, or criaderas, down to the bottom, or solera, with the volume of the extractions (sacas) being rigorously controlled so that the age of the brandy remains constant.
